한국에서 인기가 높은 별미 중 하나는 동물 내장 요리입니다. 내장까지 먹는다는 것은 한국인들이 가축들을 얼마나 알뜰하게 활용하는지를 보여 주는 예이기도 합니다. 하지만 아이러니하게도 내장 요리는 동물의 남은 부위로 만들어지지만 이러한 요리는 꽤 비싼 편입니다. 곱창은 동물의 소장을 뜻합니다. 그 외에도 동물의 소화 기관 중에는 먹을 수 있는 것들이 여러 가지가 있고 각기 이름이 있습니다. 동물의 대장은 대창이라고 부릅니다. 주로 소와 돼지의 곱창이나 대창을 우리가 먹습니다. 그리고 양(소의 제1위, 위의 80퍼센트 차지)과 막창(소의 제4위)이라는 부위가 있습니다. 양과 막창은 소의 위장에서 식용이 가능한 부위를 가리킵니다. 이것들은 소화 기관에서 마지막 단계의 부위들이기 때문에, 고기의 좋지 않은 냄새를 제거하기 위해 각별히 신경을 써야 합니다.

One very popular delicacy in Korea is animal intestines. This goes to show you how Koreans like to make the most of their livestock. Ironically enough, although the intestines are the leftover parts of the animals, the dishes made from these ingredients are rather expensive. The word gopchang refers to the small intestines in an animal. There are other digestive parts with different names that you can also eat. The large intestines are called daechang. You can enjoy the gopchang and daechang of cows or pigs. However, there’s also something called yang and makchang. Yang and makchang are edible parts of a cow’s stomach. Because these are the final parts of the digestive tract, special care needs to be taken to get rid of the unpleasant smell from the meat.
